Long Live the Peanut Butter Cookie!
We have a lot of strange holidays and national days. However, some of them make sense! This June 12th is National Peanut Butter Cookie Day, and we’d love to celebrate it with a healthy but yummy alternative that everyone can enjoy.
What you’ll need:
- 1 cup natural peanut butter (that means no additives or
sugars. Just peanuts and Junebe a little salt) - 3/4 cup coconut sugar
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
How to make them:
Preheat the oven to 350 °F and line a baking sheet with parchment paper.
Add all the ingredients to a bowl. Combine with an electric mixer. At first, it will be a thin mix, but after about 30 seconds of mixing, it should firm up enough so that you can roll it into balls.
Divide into 50-gram balls and place about 4″ apart on the sheet.
Bake immediately for 11-14 minutes or until they’ve crackled nicely and no longer appear wet in the middle.
Let them cool completely on the baking sheet. (If you don’t let them cool on the baking sheet, the bottom of the cookie likely won’t be baked enough.)
Store in an airtight container for up to 5 days. Enjoy!
