Happy Thanksgiving! Thanksgiving wouldn’t be what it is without the main dish – the turkey!

What you’ll need:

For the Turkey:

1 whole turkey (12-15 pounds)

1/2 cup butter, softened

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

Salt and black pepper to taste

For the Stuffing:

8 cups bread cubes

1/2 cup butter

1 large onion, chopped 2 stalks celery, chopped

3-4 cloves garlic, minced

2 teaspoons dried sage

2 teaspoons dried thyme

2 teaspoons dried rosemary

Salt and black pepper to taste

2-3 cups chicken or vegetable broth

How to make it:

1. Prepare the Turkey:

  1. Preheat the oven to 325°F (165°C).
  2. In a small bowl, mix together the softened butter, minced garlic, chopped rosemary, salt, and pepper.
  3. Rinse the turkey inside and out, then pat dry with paper towels.
  4. Place the turkey in a roasting pan.
  5. Carefully loosen the skin from the breast and rub the butter mixture under the skin and all over the turkey.
  6. Season the outside of the turkey with additional salt and pepper.
  7. Roast the turkey in the preheated oven for 15 minutes per pound, or until the internal temperature reaches 165°F (74°C) when measured at the thigh.

2. Prepare the Stuffing:

  1. Spread the bread cubes in a single layer and let them dry out over night, or bake them in a preheated oven at 275°F (135°C) for about 30-40 minutes until dry but not browned.
  2. In a large skillet, melt the butter over medium heat. Add the chopped onion, celery, and garlic. Cook until tender.
  3. Stir in the dried sage, thyme, rosemary, salt, and black pepper.
  4. In a large mixing bowl, combine the cooked vegetable mixture with the dried bread cubes. Pour in enough chicken or vegetable broth to moisten, and mix well.
  5. Stuff the turkey cavity with the prepared stuffing just before roasting.

3. Roasting:

  1. Place the stuffed turkey in a roasting pan, breast side up.
  2. Cover loosely with aluminum foil and roast as per the turkey’s weight.
  3. About 45 minutes before the turkey is done, remove the foil to brown the skin.
  4. Let the turkey stand for about 15-20 minutes before carving.
  5. Serve the delicious Roasted Rosemary Garlic Turkey with Herb Stuffing as the centerpiece for your Thanksgiving feast! Enjoy!
