Thanksgiving Special: Roasted Rosemary Garlic Turkey Recipe
Happy Thanksgiving! Thanksgiving wouldn’t be what it is without the main dish – the turkey!
What you’ll need:
For the Turkey:
1 whole turkey (12-15 pounds)
1/2 cup butter, softened
4 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
Salt and black pepper to taste
For the Stuffing:
8 cups bread cubes
1/2 cup butter
1 large onion, chopped 2 stalks celery, chopped
3-4 cloves garlic, minced
2 teaspoons dried sage
2 teaspoons dried thyme
2 teaspoons dried rosemary
Salt and black pepper to taste
2-3 cups chicken or vegetable broth
How to make it:
1. Prepare the Turkey:
- Preheat the oven to 325°F (165°C).
- In a small bowl, mix together the softened butter, minced garlic, chopped rosemary, salt, and pepper.
- Rinse the turkey inside and out, then pat dry with paper towels.
- Place the turkey in a roasting pan.
- Carefully loosen the skin from the breast and rub the butter mixture under the skin and all over the turkey.
- Season the outside of the turkey with additional salt and pepper.
- Roast the turkey in the preheated oven for 15 minutes per pound, or until the internal temperature reaches 165°F (74°C) when measured at the thigh.
2. Prepare the Stuffing:
- Spread the bread cubes in a single layer and let them dry out over night, or bake them in a preheated oven at 275°F (135°C) for about 30-40 minutes until dry but not browned.
- In a large skillet, melt the butter over medium heat. Add the chopped onion, celery, and garlic. Cook until tender.
- Stir in the dried sage, thyme, rosemary, salt, and black pepper.
- In a large mixing bowl, combine the cooked vegetable mixture with the dried bread cubes. Pour in enough chicken or vegetable broth to moisten, and mix well.
- Stuff the turkey cavity with the prepared stuffing just before roasting.
3. Roasting:
- Place the stuffed turkey in a roasting pan, breast side up.
- Cover loosely with aluminum foil and roast as per the turkey’s weight.
- About 45 minutes before the turkey is done, remove the foil to brown the skin.
- Let the turkey stand for about 15-20 minutes before carving.
