Paleo Easter Egg Nest Cookies
Why not choose a couple of alternative ideas to have your Easter bunny hide around your home this Easter time. Having something like these Easter egg nest cookies alongside your regular treats can reduce the amount of sugar you and your family are consuming this coming holiday.
Here’s a favorite Easter alternative; they’re fun to make and look great.
What you need:
- 1 cup blanched almond flour
- 1/2 cup shredded unsweetened coconut
- 1/2 cup coconut flour
- 1 teaspoon baking soda
- 1/4 cup maple syrup
- 1 egg
- 2 tablespoons coconut oil melted
- 1 teaspoon vanilla extract
Decorations on top:
- jelly beans (low sugar or vegan if possible)
- 1/3 cup shredded unsweetened coconut
- 1 drop green food coloring (can be excluded)
Mix together almond flour, coconut flakes, coconut, and baking soda in a bowl. Stir in maple syrup, egg, coconut oil, and vanilla extract until thoroughly combined.
Chill the dough for 30 minutes.
Preheat oven to 350.
Roll the dough into 1 inch balls. Use your thumb to press a small indent in the cookie.
Bake at 350 for 10-12 minutes until edges start to brown. These cookies won’t spread, so you can leave them reasonably close together without worrying.
While cookies are baking, stir together coconut flakes and food coloring until coconut turns green for the ‘grass’ base of the nest.
When the cookies are ready, remove them from the oven. Let them cool for a couple of minutes.
Place a pinch of shredded coconut ‘grass’ and 2-3 jelly bean ‘eggs’ in the nests.
